Beans The Magical Fruit

October 13, 2017

One of the best foods of Mother Nature, and a must for every diet!

Beans are loaded with phytochemicals and pro-tease inhibitors that are being studied as anti-cancer agents.  Although a bean’s protein is considered incomplete because it is low in the amino acid methionine, your body will transform it into a high quality complete protein if you eat grains, and seeds at some point during the same day.

Beans are some of the very best sources of soluble fiber, which has been shown to lower serum cholesterol and stabilize blood sugar.  Insoluble fiber is also considerable in beans.  Beans contain no cholesterol and are low in fat.

To avoid stomach aches and flatulence, never eat a crunchy bean.  Cook beans thoroughly.  This breaks down indigestible enzymes present in raw beans.  Soaking is also vital to happy digestion, which removes much of the indigestible sugar, (oligosaccharides), in beans.  Unfortunately, humans cannot digest these sugars in their stomach, so they travel to the intestines where bacterial enzymes break them down, producing methane, hydrogen and carbon dioxide.  You will notice how beans foam when they soak, this is due to the sugar extraction.

If beans are new to your diet, introduce them slowly to allow your intestinal bacteria to adjust and make bean digestion more efficient.  Almost anyone can eat these nutrition powerhouses without digestive problems if they are prepared and introduced to your system properly.  Pre-soaking and thorough cooking are vital for removing the majority of digestive problems.   Don’t overdo it when eating beans.  A good ratio of beans to grains in a meal is about 1 to 4.  For a side dish serve about 1/3 to 1/2 cup.

There are literally thousands of ways to prepare beans, by themselves or in combination with other foods. Get a bean cook book and get healthy by eating more beans!
